How about a yummy side dish of tasty hash to go with your eggs at breakfast time? Well, I have just the idea for you.
This is a recipe I tried from Chrissy Teigen’s latest book Cravings – Hungry For More.
I did tweak it a little as I don’t have a cast iron skillet nor did I have cheese to grate so I just used shredded cheddar. You can use whatever cheese or no cheese according to your personal preference.
1 1/4 pounds potatoes, unpeeled, cut into 1/2-inch dice
1/4 cup vegetable oil
1 large onion, cut into half inch dice
6 cloves of garlic, coarsely chopped
1 large green bell pepper, seeded and diced
2 jalapeños peppers, diced (take the seeds out)
1/2 teaspoon freshly ground pepper
1 teaspoon paprika
1/2 cup vegetable or chicken broth (or water)
1 cup grated cheddar cheese
6 eggs cooked sunny side up or however you like, for serving
Hot sauce, for serving
In a microwave safe bowl, combine the potatoes and 1 inch of water. Cover and cook on high until the potatoes are partially cooked. Around 5 to 6 minutes. Drain the potatoes and set aside.
Heat the oil in a large cast iron skillet, or large frying pan over medium high heat until shimmering hot. Add the onion, garlic, bell pepper, and jalapeños and cook, stirring occasionally until the onions are transclucent and the peppers are softened, about 8 minutes.
Reduce the heat to medium, then stir in the potatoes, 1 teaspoon salt, the black pepper and paprika. Pour the broth or water into the pan and cook, stirring only once and a while. I covered my pan for a few minutes till the potatoes look cooked. The whole thing should be golden and crispy looking around 15 minutes.
Taste and add more salt and seasonings to your preference. Turn oven off and sprinkle with the cheese, cover pan and cook till the cheese is melted. It will melt pretty quick. Around 3 to 4 minutes.
Serve with eggs and hot sauce. Yum!
I cooked one sunny side up egg and one over easy. When I moved the hash into the casserole bowl, the cheese mixed up in it, just incase you’re wondering where the cheese is. It’s in there, trust me.

I have eaten this & must say it is absolutely delicious. I put two sunnyside up eggs on top, so the yolk ran down over the hash. Absolutely a must for breakfast, lunch or dinner.
